How to convert cups of all-purpose flour to grams

Multiply the number of cups by the weight of one cup of that ingredient. For all-purpose flour, one US cup (1 cup in the USDA record) weighs 125 g, so the formula is grams = cups × 125.

To go from grams to cups, divide instead. There is no single cups-to-grams factor because a cup is a volume of 236.588 mL and each food has its own density and its own way of settling in the cup.

Why does a cup of flour weigh less than a cup of sugar?

Flour is a fine powder with a lot of air between the particles, so a cup of it weighs 125 g. Sugar crystals are denser and pack tighter: 200 g per cup. Liquids are heavier still: milk is 244 g and honey 339 g per cup. How you fill the cup changes the number too. In the USDA data, brown sugar is 220 g packed and 145 g unpacked, and powdered sugar is 120 g unsifted and 100 g sifted.

It depends on the ingredient. In USDA FoodData Central, one US cup weighs 125 g for all-purpose flour, 200 g for granulated sugar, 220 g for packed brown sugar, 227 g for butter, 244 g for whole milk and 339 g for honey.

How many grams is 1 cup of flour?

One US cup of all-purpose flour is 125 g in USDA data. Bread flour is listed at 137 g per cup. If you scoop straight from the bag and pack the cup, you can get noticeably more, which is why bakers weigh flour.

How many grams is 1 cup of sugar?

One US cup of granulated sugar is 200 g. Brown sugar is 220 g packed and 145 g unpacked; powdered sugar is 120 g unsifted and 100 g sifted.

How many grams is 1 cup of butter?

One US cup of butter is 227 g, which is two sticks. One stick is 113 g and one tablespoon is 14.2 g in USDA data.

Is a US cup the same as a metric cup?

No. The weights here are for the US cup of 8 US fluid ounces (236.588 mL). Recipes from metric countries often use a 250 mL cup, about 6% larger; we did not confirm that value in an official source, so check your recipe.

Why does my cup of flour weigh more than 125 g?

The USDA figure is an average for a level cup. Scooping compacts the flour, humidity adds weight, and different brands grind differently. For baking, trust the scale over the cup.
